ability to modify percentage taken out

I would love the ability to be able to be able to make my paycheck more accurate. Basically have the ability to take out more than just tax percentage, like federal tax, state tax, the amount taken out additionally for miscellaneous things, and even my Union fees. And maybe be able to calculate and compare against my actual paycheck
